How to make Swedish 'Dream' cookies for fika

Want to fika but think cinnamon buns are too complicated? Food writer John Duxbury shares his favourite recipe for a simple but yummy Swedish cookie.

We all know that Swedes love to fika, but have you heard about kaffekalas? It literally means coffee party and is an old Swedish custom. Traditionally, it should include seven different kinds of cookies and cakes.

Here's one recipe to get you started.

Preparation: 15 minutes

Cooking: 20 minutes

Ingredients

200g sugar

1 tbsp vanilla sugar

100g (4oz) butter

220g (1 ¾ cups) plain, all-purpose flour

2 tbsp potato flour (starch)

200ml (0.85 cups) corn flakes or Rice Krispies

1 tsp hjorthornssalt (ammonium carbonate

Method

1. Pre-heat the oven to 150C.

2. Line two baking trays with greaseproof paper.

3. Beat the sugars and butter until light and fluffy.

4. Drizzle in the oil.

5. Mix the hjorthornssalt with a little plain flour and blend into the butter-sugar mixture.

6. Mix in the rest of flour and the potato flour.

7. Mix in the corn flakes or Rice Krispies.

8. Divide the mixture into about 40 round balls. Arrange them on baking trays.

9. Bake them in the middle of the oven for 15-20 minutes until dry but remove them before they brown. Leave to cool on a wire rack.

Tips

- For variation, top each and every one with half an almond before baking.

- These keep well for several days in airtight jars or freeze for future use.

- I like to add some cornflakes or Rice Krispies (as above), but if you want a more traditional version, replace them with an extra 100g flour and an extra 100g caster sugar.
